Oatmeal cake



  • cinnamon - 3/4 tsp
  • eggs - 2 item
  • flour
  • brown sugar - 1 c
  • evaporated milk - 1/2 c
  • nutmeg - 1/2 tsp
  • baking soda - 1 tsp
  • boiling water
  • stick butter - 1 item
  • white sugar - 1 c
  • can coconut - 1 item
  • quick cooking oatmeal uncooked - 1 c
  • Beat eggs; add sugars and beat well

How to make oatmeal cake:

Mix oatmeal, butter and boiling water together; cover and let cool while mixing the remaining ingredients. Beat eggs; add sugars and beat well. Sift dry ingredients together. Add part of flour and part of oatmeal mixture to egg mixture alternately. Pour in 9 x 12 x 2-inch pan. Bake at 350° for 25 to 30 minutes.Icing:1 1/2 c. brown sugar3/4 stick butter1/2 c. evaporated milk1 can coconut Mix ingredients and cook just long enough to melt sugar. When cake is done, puncture top so icing will penetrate. Pour icing over cake. Bake at 350° for an additional 20 to 30 minutes. Sprinkle nuts on top.
