  • sugar - 1 c
  • cinnamon - 3/4 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • chopped nuts - 1/2 c
  • butter
  • coconut - 1/2 c
  • soda - 1 tsp
  • boiling water
  • firmly packed brown sugar - 1 c
  • butter or margarine, softened - 1/2 c
  • cream - 3 Tbsp
  • sifted all-purpose flour
  • allspice - 1/4 tsp
  • Quaker oats - 1 c

How to make oatmeal cake:

Frosting:1/4 c. butter1/2 c. firmly packed brown sugar3 Tbsp. cream1/2 c. chopped nuts1/2 c. coconut Cake: Pour boiling water over oats. Cover. Let stand for 20 minutes. Beat butter until creamy. Add sugars and beat until fluffy. Blend in vanilla and eggs. Add oat mixture. Mix well. Sift together flour, soda, salt, cinnamon and allspice. Add to mixture and mix well. Pour batter into greased and floured pan (9-inch square). Bake in preheated oven at 350° for 50 to 55 minutes. Do not remove from pan.

Frosting: Combine all ingredients. Spread evenly over cake. Broil until frosting becomes bubbly. Cake may be served warm or cold.
