Ingredients/Components
- cinnamon - 1 tsp
- vanilla - 1/2 tsp
- granulated sugar - 1 c
- salt - 1/2 tsp
- flour
- brown sugar - 1 c
- soda - 1 tsp
- boiling water
- shredded coconut - 1 c
- melted butter or margarine
- cream or milk - 1/4 c
- eggs or Egg Beaters - 2 item
- quick cook oats - 1 c
- shortening or vegetable oil - 1/2 c
How to make oatmeal cake:
Topping:6 Tbsp. melted butter or margarine1/2 c. brown sugar1/4 c. cream or milk1/2 tsp. vanilla1 c. shredded coconut Pour boiling water over oats. Let stand 20 minutes. Cream together the shortening, brown sugar, granulated sugar, cinnamon, flour, soda and salt. Add eggs and oat mixture. Beat in rectangle pan for 30 to 35 minutes or until done at 350°. Remove from oven and immediately spread on the topping.For topping, mix together the butter, brown sugar, cream, vanilla and coconut. Spread on warm cake and place in broiler or oven until toasted.
