Ingredients/Components
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- milk - 3 Tbsp
- salt - 1/2 tsp
- flour
- brown sugar - 1/2 2/3
- nutmeg - 1 tsp
- soda - 1 tsp
- margarine - 1/2 c
- brown sugar, firmly packed - 1 c
- oatmeal - 1 c
- white sugar - 1 c
- applesauce - 1 Tbsp
- nuts and coconut if desired - 1 item
How to make oatmeal cake:
Frosting:1/4 c. margarine1/2 to 2/3 c. brown sugar3 Tbsp. milk nuts and coconut if desired Mix oatmeal, margarine, white sugar, brown sugar (firmly packed) and salt; then add 1 1/4 cups boiling water. Let cool until lukewarm; beat well. Add eggs, applesauce and vanilla; beat. Add dry ingredients (flour, soda, cinnamon and nutmeg); beat. This will be a thin batter. Bake in desired shape pan at 350° for 40 minutes.Frosting: Combine margarine, brown sugar and milk. Cook until it will form a soft ball in cold water. Add flavoring, nuts/coconut if desired. Beat a little; pour over warm cake.
