Ingredients/Components

  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour
  • brown sugar - 1 c
  • butter - 1 tsp
  • evaporated milk - 1/2 c
  • coconut - 1 c
  • baking soda - 1 tsp
  • boiling water
  • white sugar - 1 c
  • quick oats - 1 c
  • stick margarine or butter - 1 item
  • In separate bowl, cream margarine and sugars

How to make oatmeal cake:

Pour boiling water over oats; let stand 20 minutes. In separate bowl, cream margarine and sugars. Add eggs, one at a time, beating after each egg. Add oat mixture. Mix together flour, baking soda, salt and cinnamon. Add to creamed mixture. Add vanilla; mix well. Bake at 350° in a 9 x 13-inch pan for 30 to 35 minutes.Topping:1 c. brown sugar1/2 c. evaporated milk1 c. chopped nuts1 tsp. butter1 c. coconut Cream together. Pour over warm cake. Place under broiler for 3 to 5 minutes. Watch closely as it will burn easily.
