  • quick or old fashioned oats - 1 c
  • boiling water
  • brown sugar - 1 c
  • white sugar - 1 c
  • stick margarine - 1 item
  • eggs - 2 item
  • vanilla - 1 tsp
  • all-purpose flour
  • baking soda - 1 tsp
  • cinnamon - 1 tsp
  • nutmeg - 1 tsp
  • Let set 20 minutes
  • nuts pecans or walnuts - 1 c
  • milk - 3 Tbsp
  • margarine - 3 Tbsp

How to make oatmeal cake:

Pour water over oats in separate bowl. Let set 20 minutes. Cream brown sugar, white sugar, margarine, eggs and vanilla together and add oats. Add flour, baking soda, cinnamon and nutmeg and mix well. Pour into greased 9 x 13 pan. Bake at 350° for about 30 minutes.Topping:1 c. coconut1 c. nuts (pecans or walnuts)3 Tbsp. milk3 Tbsp. margarine1 c. brown sugar1 tsp. vanilla Combine all together and spread evenly over nearly cooled cake. Place cake under broiler until frosting becomes bubbly. Doesn't take long. Watch closely!! Serve cake warm or cold.
