Oatmeal cake
Ingredients/Components
- oatmeal - 1 c
- brown sugar - 1 c
- white sugar - 1 c
- shortening - 1/2 c
- flour
- cocoa - 1 tsp
- salt - 1 tsp
- cinnamon - 1 tsp
- vanilla - 1 tsp
- Icing:1/2 stick butter
- half and half - 3 Tbsp
- coconut - 3/4 c
How to make oatmeal cake:
Icing:1/2 stick butter1/2 c. brown sugar3 Tbsp. half and half3/4 c. coconut Pour 1 1/2 cups boiling water over 1 cup of oats and let stand. Mix oatmeal, both sugars, shortening, flour, cocoa, salt, cinnamon and vanilla. Mix well. Pour into greased 9 x 13 pan. Bake at 350° for 30 minutes. Insert toothpick in center to check if it's done.Icing: Mix butter, brown sugar, half and half and coconut. Spread over cake. Put under broiler until coconut browns.
