  • salt - 1 Tbsp
  • flour - 5 6
  • boiling water - 2 c
  • margarine - 2 Tbsp
  • warm water - 1/2 c
  • quick oats - 1 c
  • whole wheat flour - 1/2 c
  • dry yeast - 1 pkg
  • brown sugar, molasses or honey - 1/2 c

How to make oatmeal bread:

Dissolve yeast in warm water. In a large bowl combine oats, whole wheat flour, sugar, salt and margarine. Pour boiling water over all and mix well. When mixture is cooled to lukewarm, stir in yeast. Stir in approximately half of flour. Turn onto floured surface and knead in remaining flour.

Place in a greased bowl. Cover and let rise until double. Punch down. Shape into two loaves and place in greased bread pans. Let rise again. Bake at 350° for 30 to 40 minutes. Cool on rack, brushing loaves with margarine for a soft crust, or brush tops lightly with honey and sprinkle with oats.

To Make Dinner Rolls: Double the recipe. Grease two 15 x 10-inch jelly roll pans. Divide the double recipe in half, then make 28 balls of even size. Put 28 balls on each pan. Allow to rise again until double in size. Bake at 350° for 15 to 20 minutes.
