Ingredients/Components

  • sugar - 1/2 c
  • cinnamon - 1/2 tsp
  • vanilla - 1/2 tsp
  • milk - 1 c
  • salt - 1/2 tsp
  • baking powder - 1 Tbsp
  • vegetable oil - 1/4 c
  • egg - 1 item
  • all-purpose flour - 1 c
  • blueberries - 1 c
  • quick or old-fashioned oats, uncooked

How to make oatmeal blueberry muffins:

Note: An additional 1/4 to 1/2 cup sugar may be added for sweeter taste.

Mix together first 6 ingredients. Cream together oil, milk, egg and vanilla. Dust blueberries with 1 tablespoon of dry ingredients; set aside. Add creamed mix to dry mix until just moistened. Fold in blueberries. Fill 12 greased medium-sized muffin cups 2/3 full. Bake at 425° for 20 to 25 minutes.
