  • whipping cream - 1/4 c
  • grated orange peel
  • grated lemon peel
  • large egg yolk - 1 item

How to make new york cheesecake:

Pastry:1 c. flour1/4 c. sugar1 stick butter1 large egg yolk1 tsp. vanilla1 tsp. grated lemon peel Pastry directions: Sift together flour and sugar. Add cold butter, cut into bits, and large egg yolk, lightly beaten. Add vanilla and grated lemon rind. Blend and knead. Form dough into two balls, one slightly larger. Remove sides of 9-inch spring-form pan and press small ball onto bottom of pan. Bake at 400° for 8 to 10 minutes, until lightly brown. Cool completely. Butter sides of pan, attach to bottom and press remaining dough 1 3/4-inches up the sides of the pan. Press firmly but gently where sides join bottom.

Cheesecake directions: Heat oven to 500°. Beat cream cheese, sugar, flour, orange and lemon peel, vanilla and two of the eggs until smooth. Continue beating, adding remaining eggs and the yolks, one at a time, until blended. On low speed blend in cream. Pour into pastry-lined pan. Bake 12 to 15 minutes. Reduce oven temperature to 200°. Bake 1 hour longer. Cool. Refrigerate for 12 to 24 hours. Remove sides of pan (loosen if needed), leaving cake on bottom of pan.
