New potato and green bean salad



  • clove garlic, minced - 1 item
  • Dijon mustard - 2 Tbsp
  • fresh lemon juice - 2 Tbsp
  • balsamic vinegar - 1/4 c
  • chopped fresh basil - 1/4 c
  • green beans - 3/4 lb
  • small red onion, chopped - 1 item
  • dash Worcestershire sauce - 1 item
  • red skinned potatoes
  • x-virgin olive oil - 1/2 c

How to make new potato and green bean salad:

Salad:1 1/2 lb. red skinned potatoes3/4 lb. green beans1 small red onion, chopped1/4 c. chopped fresh basil Dressing: Combine vinegar, mustard, lemon juice, garlic and Worcestershire sauce. Gradually whisk in oil. Season to taste with salt and pepper (can be done 1 day ahead).

Salad: Steam potatoes until tender. Cut into quarters. Cook green beans in salted water until tender-crisp, about 5 minutes. Transfer to ice water and cool. Cut beans in half. Combine potatoes, green beans, onion and basil. Add dressing. Toss to coat. Cover and let stand at room temperature. Can be done 4 hours ahead.
