Nanaimo bars
Ingredients/Components
- graham cracker crumbs - 2 c
- sugar - 1/4 c
- vanilla - 1 tsp
- chopped nuts - 1/2 c
- butter - 1/2 c
- unsweetened cocoa - 1/3 c
- sifted confectioners sugar - 2 c
- egg, beaten - 1 item
- unsweetened coconut dried - 1 c
- Add sugar, cocoa, vanilla and egg
- instant vanilla pudding powder like Jell-O brand - 2 Tbsp
- few drops of milk - 1 item
- Beat in pudding powder and confectioners sugar
How to make nanaimo bars:
Melt butter in saucepan over low heat. Add sugar, cocoa, vanilla and egg. Cook over medium heat stirring constantly until mixture thickens. Remove from heat. Stir in coconut, graham cracker crumbs and nuts. Pat mixture into a buttered 8 x 8 or 9 x 9 baking pan. Refrigerate for 1 hour.Middle Layer:1/4 c. butter2 Tbsp. instant vanilla pudding powder (like Jell-O brand)2 c. sifted confectioners sugar few drops of milk Cream butter with hand mixer. Beat in pudding powder and confectioners sugar. If mixture is too thick, add a few drops of milk. Spread over bottom layer. Refrigerate 30 minutes, until firm.Top Layer:4 oz. unsweetened (or semi sweet) baking chocolate1 Tbsp. butter Melt in a dish or pan over water, low heat, baking chocolate and butter.
