Ingredients/Components
- pkg - 1 1/4
- water - 1/2 c
- shredded Cheddar cheese
- broken tortilla chips - 1 c
- ground turkey or lean ground beef - 1 lb
- quick cooking rice uncooked - 3/4 c
- can Mexican style stewed tomatoes - 1 1/2
- can sweet corn, drained - 1 oz
How to make nacho casserole:
In a lightly greased 2-quart baking dish, spread uncooked rice in bottom. In skillet, brown meat and drain. Stir in corn, tomatoes, taco seasoning mix and water. Mix well. Spoon mixture over rice. Cover and bake at 350° for 25 minutes. Top with tortilla chips, then cheese. Bake 5 minutes or until cheese is melted.Recipe categories: Main dish, Casseroles, One Dish meal.
