Ingredients/Components

  • butter - 3 Tbsp
  • lemon juice - 1 tsp
  • chicken broth - 5 c
  • salt and pepper to taste - 1 item
  • olive oil - 1 Tbsp
  • tomato paste - 1/4 c
  • fresh mushrooms - 1 lb
  • onion - 1 item
  • marjoram - 1 tsp
  • clove garlic, split - 1 item
  • red wine or to your taste - 3 Tbsp

How to make mushroom soup:

Using a food processor, mince onion. Cook onion and garlic in heavy saucepan. Add butter and olive oil until just beginning to brown. Separate mushroom stems from caps. Mince stems and 1 cup mushroom caps in food processor. Add to onion mixture.

Fit processor with slicing dish. Carefully place remaining mushrooms in feed tube and gently push through to obtain slices. Add onion with 2 tablespoon butter; saute 5 minutes. Add tomato paste and chicken stock, mixing well. Add seasonings, lemon juice and wine. Simmer 10 minutes.
