Ingredients/Components

  • butter - 2 Tbsp
  • Parmesan cheese - 2 Tbsp
  • salt and pepper to taste - 1 item
  • grated onion - 1 Tbsp
  • chopped parsley - 1 Tbsp
  • peas - 1/2 c
  • fresh mushrooms, sliced - 1 c
  • hot rice, cooked in chicken broth - 3 c

How to make mushroom rice:

Saute mushrooms in butter until soft (3 to 4 minutes) and add rice, peas, onion, salt and pepper. Mix well; cover pan and heat over very low heat for a few minutes until piping hot. Spoon into serving dish and sprinkle with cheese and parsley.
