  • eggs - 2 item
  • milk
  • salt - 3/4 tsp
  • butter - 1 item
  • pepper - 1/4 tsp
  • mayonnaise - 1/2 c
  • fresh mushrooms - 1/2 1
  • can mushroom soup - 1 item
  • grated yellow cheese - 1 item
  • each: green pepper, onion and celery, chopped - 1/2 c

How to make mushroom business:

Note: Adjust mushrooms and bread to taste and to size of dish.

Coarsely slice mushrooms and saute in butter (do not overcook). Combine with peppers, onions, celery and mayonnaise. Season with salt and pepper. Butter 3 slices bread; cube into 1-inch squares and line bottom of casserole (butter side up). Spread mushroom mixture over this. Butter 3 bread slices; cube as before and cover mushrooms. Beat eggs and milk together; pour over bread. Refrigerate 1 hour. One hour before cooking, spoon undiluted can of soup evenly over top. Cover with 2 slices buttered bread, cubed into 1/2-inch pieces. Bake at 350° for 50 to 60 minutes. Ten minutes before dish is done, sprinkle with grated cheese.
