Mushroom barley soup
Ingredients/Components
- butter - 1/4 c
- chopped onion - 1 item
- salt and pepper - 1 item
- sliced mushrooms - 1 lb
- barley - 1/2 c
- beef broth - 4 c
- evaporated milk or cream - 1 c
How to make mushroom barley soup:
Brown mushrooms in butter. Add onion and continue to saute until onion looks clear. Add beef broth. Bring to boil. Add barley and boil for 45 minutes. Season to taste with salt and pepper. Add milk or cream. Serves 6.Recipe categories: Low protein, Soups & stews, Pasta, rice and grains.
