Mulligatawny soup
Ingredients/Components
- flour
- margarine - 1 Tbsp
- pepper - 1/4 tsp
- chopped celery - 1/2 c
- chicken broth - 5 c
- chopped onions - 1/2 c
- chopped carrots - 1/2 c
- curry powder - 2 tsp
- olive oil - 2 Tbsp
- rice - 1/2 c
- thyme - 1/4 tsp
- cooked, diced chicken - 1/2 c
- peeled and diced apple - 1 item
How to make mulligatawny soup:
Cook onions, celery and carrots in soup pot in olive oil until tender. Add margarine, flour and curry powder. Stir and cook for one minute. Add chicken broth; bring to boil. Add chicken; simmer for one minute. Add apple, rice, thyme and pepper and simmer for 15 minutes more.
