Ingredients/Components

  • flour
  • margarine - 1 Tbsp
  • pepper - 1/4 tsp
  • chopped celery - 1/2 c
  • chicken broth - 5 c
  • chopped onions - 1/2 c
  • chopped carrots - 1/2 c
  • curry powder - 2 tsp
  • olive oil - 2 Tbsp
  • rice - 1/2 c
  • thyme - 1/4 tsp
  • cooked, diced chicken - 1/2 c
  • peeled and diced apple - 1 item

How to make mulligatawny soup:

Cook onions, celery and carrots in soup pot in olive oil until tender. Add margarine, flour and curry powder. Stir and cook for one minute. Add chicken broth; bring to boil. Add chicken; simmer for one minute. Add apple, rice, thyme and pepper and simmer for 15 minutes more. Makes six 1 cup servings with 156 calories each.
