  • vanilla - 2 tsp

  • coconut - 1/2 c
  • soda - 2 tsp
  • raisins - 1/2 c
  • shredded carrots - 2 c
  • walnuts - 1/2 c
  • drained crushed pineapple - 1/2 c
  • oil * - 1 c

How to make morning glory muffins:

*For the low-fat diet, substitute 1/2 cup water and 1/2 cup oil. Combine flour, sugar, soda, cinnamon and salt. Add carrots, raisins, walnuts, coconut and crushed pineapple to flour mixture. Add eggs, oil and vanilla. Beat. Do not overstir.
