Ingredients/Components
- stick margarine - 1 item
- eggs, beaten - 2 item
- chopped onion - 1/4 c
- shredded Cheddar cheese - 2 c
- green pepper - 1/4 c
- can whole kernel corn - 1 item
- can creamed corn - 1 item
- Jiffy cornbread mix - 1 pkg
How to make mom's corn casserole:
Saute onions and peppers in margarine. Add corn and beaten eggs. Pour in casserole dish and top with dry cornbread mix. Sprinkle with cheese. Bake at 350° until golden brown, approximately 20 minutes.Recipe categories: < 60 mins, Side dish, Vegetables.
