  • eggs, beaten - 2 item
  • chopped onion - 1/4 c
  • shredded Cheddar cheese - 2 c
  • green pepper - 1/4 c
  • can whole kernel corn - 1 item
  • can creamed corn - 1 item
  • Jiffy cornbread mix - 1 pkg

How to make mom's corn casserole:

Saute onions and peppers in margarine. Add corn and beaten eggs. Pour in casserole dish and top with dry cornbread mix. Sprinkle with cheese. Bake at 350° until golden brown, approximately 20 minutes.
