  • flour - 1 c
  • baking powder - 1 tsp
  • baking soda
  • cinnamon
  • egg - 1 item
  • mashed bananas the blacker the peel, the better - 3 item
  • sugar
  • oil

How to make mom's banana bread:

Grease bread pan (any size or style). Mix dry ingredients (all but sugar); make well in center of dry ingredients. Combine egg, mashed bananas and oil together. Add to dry mixture and stir until moist; may be lumpy. If desired, add nuts (I don't). Pour into prepared pan or pans and bake at 350° until toothpick is clean when inserted into center; cool.

For best bread, bake ahead, wrap in Saran Wrap while still warm and freeze. Remove from freezer and thaw; very moist.
