Molasses filled cookies
Ingredients/Components
- sugar - 1/3 c
- cinnamon - 1/2 tsp
- salt - 1/2 tsp
- baking powder - 3 tsp
- egg - 1 item
- molasses - 2/3 c
- ginger - 1 tsp
- sifted flour
- soft shortening - 1/2 c
- Filling: mincemeat jar
How to make molasses filled cookies:
Filling: mincemeat (jar)3 tsp. baking powder1/2 tsp. salt1 tsp. ginger1/2 tsp. cinnamon Cream the shortening with the sugar. Add egg and molasses; beat well. Sift dry ingredients together and gradually add to sugar mixture; beat well. Wrap in waxed paper and chill. Roll out 1/8-inch thick on lightly floured board. Cut dough with round cookie cutter about 2-inches in diameter. On bottom part of cookie, place about 1 teaspoon of mincemeat filling with a little of the liquid. Slash top of cookie to about 1/2-inch from sides. Roll back and place over bottom part of filling. Bake 10 minutes at 350°. Makes about 3 dozen.In memory of Thelma Bess Seabaugh.
