Ingredients/Components

  • sugar - 2 c
  • cinnamon
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • flour - 3 c
  • nutmeg - 3/4 tsp
  • soda - 2 tsp
  • baking powder - 1/4 tsp
  • can crushed pineapple, drained
  • salad oil - 1 c
  • shredded zucchini - 2 c
  • currants, raisins or nuts - 1 c

How to make moist zucchini bread:

In a large bowl, add the ingredients one at a time, beating well after each addition. Pour the batter into 2 well-greased loaf pans. Bake at 350° for 45 to 60 minutes or until a toothpick tests clean. Let cool a few minutes before removing from pans.
