  • butter, softened - 1/2 c
  • sugar - 2 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • milk - 1 c
  • salt - 1 tsp
  • baking powder - 1 tsp
  • baking soda - 2 tsp
  • vegetable oil - 1 c
  • shortening - 1/2 c
  • all-purpose flour - 2 c
  • unsweetened cocoa - 3/4 c
  • hot coffee - 1 c
  • Add oil, coffee and milk; mix at medium speed for 2 minutes

How to make moist chocolate cake:

Sift together dry ingredients in a mixing bowl. Add oil, coffee and milk; mix at medium speed for 2 minutes. Add eggs and vanilla. Beat 2 more minutes (batter will be thick). Pour into two greased and floured 9 x 1 1/2-inch cake pans or two 8-inch cake pans. Bake at 325° for 25 to 30 minutes. Cool cakes 15 minutes before removing from pans. Cool on wire rack.Icing:1 c. milk5 Tbsp. all-purpose flour1/2 c. butter, softened1/2 c. shortening1 c. sugar1 tsp. vanilla Combine the milk and flour on saucepan. Cook until thick. Cover and refrigerate. In a mixing bowl, beat butter, shortening, sugar and vanilla until creamy. Add chilled milk/flour mixture and beat for 10 minutes. Frost cooled cake. Yields 12 servings.
