Ingredients/Components
- sugar - 3 c
- grated zucchini - 4 c
- can unsweetened pineapple juice - 1 oz
- real lemon
How to make mock pineapple:
Remove peel and seeds from zucchini before grating. Mix together all ingredients. Bring to a boil, then simmer for 20 minutes. Pour zucchini mixture into hot jars, leaving 1/2 inch head space. Process for 30 minutes in hot water bath.Notes: May be used in any recipe that calls for crushed pineapple.
