Mock caesar salad
Ingredients/Components
- salt - 1/8 tsp
- water - 1/4 c
- Dijon mustard - 1/2 tsp
- white wine vinegar - 1 Tbsp
- torn romaine lettuce - 2 c
- clove garlic - 1 item
- pine nuts - 2 Tbsp
- olive oil - 1/4 c
- freshly grated Parmesan cheese - 2 Tbsp
- pepper, freshly ground - 1/8 tsp
How to make mock caesar salad:
Combine garlic and water in a small saucepan. Bring to a boil. Cover, reduce heat and simmer 10 minutes or until soft; drain. Place garlic in a salad bowl; add salt. Mash into a paste, using the back of a spoon. Stir in vinegar and mustard with a wire whisk. Add olive oil in a slow, steady stream, beating with a whisk until blended. Add lettuce and gently toss.
