Ingredients/Components
- sugar - 2 c
- cinnamon - 1/2 tsp
- water - 2 c
- cream of tartar - 2 tsp
- lemon juice - 2 Tbsp
- Ritz crackers - 36 item
- vegetable oil spread - 2 Tbsp
- pastry for 2 9-inch pies
How to make mock apple pie:
Line pie plate with one pie pastry. Crumble up crackers and place in pastry.In saucepan, over high heat, heat water, sugar and cream of tartar to a boil; simmer for 15 minutes. Add lemon juice and cool. Pour over crackers. Dot with spread; sprinkle with cinnamon.
Place other pastry over top. Slit top crust to allow steam to escape. Bake at 425° for 30 to 35 minutes or until crisp and golden. Cool completely.
