Ingredients/Components

  • sugar
  • eggs - 3 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • water - 1/2 c
  • baking soda - 1/4 tsp
  • shortening - 2/3 c
  • sifted cake flour - 2 c
  • cream of tartar - 1/2 tsp
  • instant coffee - 1 Tbsp
  • sq - 2 oz

How to make mocha pound cake:

Stir shortening to soften. Sift in cake flour, sugar, instant coffee, salt, cream of tartar and soda. Add water and vanilla. Mix until flour is dampened. Then beat vigorously 2 minutes. Add eggs and chocolate. Beat one minute longer.

Pour into paper-lined 9 1/2 x 5 x 3-inch loaf pan. Bake in slow oven at 325° about 65 to 70 minutes or until done. Cool in pan 10 minutes; remove. When thoroughly cool, sift confectioners sugar over top.
