Ingredients/Components

  • eggs - 3 item
  • butter - 1/2 c
  • melted butter - 6 Tbsp
  • powdered sugar
  • miniature marshmallows
  • baking chocolate, melted - 3 sq
  • cream, whipped or 2 c - 1 c
  • vanilla wafers or graham cracker crumbs - 2 c
  • crushed pillow mints - 1/4 c

How to make mint dazzler:

Blend vanilla wafers or graham cracker crumbs and melted butter; press into a 9 x 13-inch pan. Cream the powdered sugar and butter; add eggs, one at a time, beating after each addition. Add melted chocolate. Beat until light and fluffy. Spoon over crumbs in pan. Refrigerate. Whip the cream (or use Cool Whip); gently fold in the marshmallows. Spread carefully over the chocolate layer. Sprinkle crushed mints over the top. Refrigerate at least 3 hours before serving. Cut into squares and serve. Very refreshing.
