Ingredients/Components
- sugar - 3/4 c
- eggs - 2 item
- vanilla - 1 tsp
- pkg - 2 oz
- lemon juice - 1 Tbsp
- vanilla wafers - 24 item
How to make miniature cheesecakes:
Line cupcake pans with 24 liners. Place a vanilla wafer in bottom of each liner. In a small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Fill the liners 2/3 full. Bake in a preheated 375° oven for 15 to 20 minutes or until set. Serve plain or with fruit filling on top. Makes 24 servings.Recipe categories: Cheesecake, Desserts, Cakes.
