Ingredients/Components
- salt - 1/2 tsp
- egg - 1 item
- ground beef
- Italian seasoning - 1/2 tsp
- can Durkee fried onions - 1 item
- small potatoes, sliced thin - 6 item
- potatoes, cut in small cubes - 1 item
- bag frozen broccoli, corn and red peppers, thawed - 1 item
How to make mini meat loaf:
Combine meat, salt, egg, 1/2 can tomato sauce, Italian seasoning and 1/2 can fried onions. Make 3 small meat loaves; place in 9 x 13-inch baking dish. Place potatoes around loaves. Bake covered at 375° for 35 minutes. Place vegetables around loaves and mix with potatoes; add remaining tomato sauce to loaves. Salt and pepper. Bake 15 minutes uncovered; add remaining fried onions and bake 5 more minutes.Recipe categories: Comfort food, High in..., High protein.
