Ingredients/Components

  • pkg - 3 oz
  • sq - 8 oz

How to make mini chocolate cheesecakes:

Preheat oven to 325°. Lightly grease (2 1/2 or 2 3/4-inch) muffin pan cups; set aside. Combine cream cheese and sugar in large bowl. Beat at medium speed of electric mixer until light and fluffy, about 2 minutes, scraping side of bowl 1 or 2 times. Add eggs and vanilla; beat until well blended, about 2 minutes.

Meanwhile, place chocolate in 1-cup microwavable glass measure. Microwave at High 1 to 1 1/2 minutes or until chocolate is melted, stirring after 1 minute. Add melted chocolate to cream cheese mixture. (If using stand mixer, keep mixer running while adding chocolate.) Beat until well blended, about 1 minute.

Divide mixture evenly among prepared muffin cups. Place muffin pan in larger baking pan; place on oven rack. Pour warm water into larger pan to depth of 1/2 to 1-inch. Bake cheesecakes 20 minutes or until edges are dry and very small area in centers is not set. Remove muffin pan from water bath. Cool cheesecakes completely in muffin pan.

Variation: Before adding chocolate to batter in mixer bowl, place about 2 heaping tablespoons of batter into each muffin cup. Add chocolate to remaining batter in mixer bowl and beat to combine. Spoon chocolate batter into vanilla batter in muffin cups. Swirl with a knife before baking. Makes 12 servings.
