Mini cheesecakes

Ingredients/Components

• graham cracker crumbs
• sugar - 1/2 c
• eggs - 3 item
• vanilla - 2 tsp
• can Eagle Brand sweetened condensed milk - 1 oz
• cream cheese, softened - 3 (8
• margarine or butter, melted - 1/2 c
• can pie filling cherry, blueberry, etc - 1 oz

How to make mini cheesecakes:

Preheat oven to 300°. Mix together crumbs, sugar and margarine. Press equal portions into paper lined muffin cups. In large bowl, beat cream cheese until fluffy. Gradually beat in condensed milk until smooth. Add eggs and vanilla; mix well. Spoon equal amounts of mixture (about 3 tablespoons) into prepared cups. Bake for 20 minutes or until set; cool. Chill. Top with filling.

Chocolate Cheesecakes: Melt 1 cup chocolate chips; add to batter.
