- water - 2 c
- pepper - 1/4 tsp
- chopped onion - 1 c
- chicken broth
- minced garlic - 1 tsp
- sliced carrots - 1 c
- can crushed tomatoes - 1 oz
- small pasta shells
- red kidney beans, drained and rinsed - 1 (16
- medium size zucchini, quartered lengthwise, then sliced - 1 item
- box frozen cut Italian green beans - 1 oz
How to make minestrone soup:
Bring broth, water, onion, carrots and garlic to a boil in a 3 to 4-quart pot. Reduce heat, cover and simmer 3 minutes. Add crushed tomatoes, zucchini, green beans and pepper. Return to boil. Add pasta, cover and simmer 10 minutes. Stir occasionally until pasta is tender. Stir in beans (kidney).Recipe categories: Vegetables, Soups & stews, Italian.
