Minestrone soup



  • water - 2 c
  • pepper - 1/4 tsp
  • chopped onion - 1 c
  • chicken broth
  • minced garlic - 1 tsp
  • sliced carrots - 1 c
  • can crushed tomatoes - 1 oz
  • small pasta shells
  • red kidney beans, drained and rinsed - 1 (16
  • medium size zucchini, quartered lengthwise, then sliced - 1 item
  • box frozen cut Italian green beans - 1 oz

How to make minestrone soup:

Bring broth, water, onion, carrots and garlic to a boil in a 3 to 4-quart pot. Reduce heat, cover and simmer 3 minutes. Add crushed tomatoes, zucchini, green beans and pepper. Return to boil. Add pasta, cover and simmer 10 minutes. Stir occasionally until pasta is tender. Stir in beans (kidney).
