Ingredients/Components

  • lean salt pork, finely diced - 1/4 lb
  • water
  • can whole tomatoes undrained, chopped - 1 oz
  • can red kidney beans undrained - 1 oz
  • beef flavored bouillon cubes - 6 item
  • diced carrots - 1 c
  • diced celery - 1 c
  • shredded cabbage - 1 c
  • chopped green onions - 1 c
  • pkg - 1 oz
  • dried whole basil - 1 tsp
  • black pepper - 1/2 tsp
  • uncooked macaroni - 3/4 c

How to make minestrone soup:

Saute pork in a large Dutch oven until crisp. Drain. Add remaining ingredients, except macaroni. Simmer 1 hour. Bring to a boil. Reduce heat; add macaroni the last 10 minutes. Sprinkle with Parmesan cheese.
