Minestrone soup
Ingredients/Components
- lean salt pork, finely diced - 1/4 lb
- water
- can whole tomatoes undrained, chopped - 1 oz
- can red kidney beans undrained - 1 oz
- beef flavored bouillon cubes - 6 item
- diced carrots - 1 c
- diced celery - 1 c
- shredded cabbage - 1 c
- chopped green onions - 1 c
- pkg - 1 oz
- dried whole basil - 1 tsp
- black pepper - 1/2 tsp
- uncooked macaroni - 3/4 c
How to make minestrone soup:
Saute pork in a large Dutch oven until crisp. Drain. Add remaining ingredients, except macaroni. Simmer 1 hour. Bring to a boil. Reduce heat; add macaroni the last 10 minutes. Sprinkle with Parmesan cheese.Recipe categories: Vegetables, Soups & stews, Italian.
