Ingredients/Components

  • Italian sausage links mild or hot - 1 lb
  • medium onion, chopped - 1 item
  • clove garlic, minced - 1 item
  • vegetable oil - 1 Tbsp
  • whole tomatoes, crushed with juice - 1 can
  • cans beef broth - 2 item
  • can Great Northern beans, undrained - 1 item
  • medium carrots, sliced - 3 item
  • dried parsley flakes - 2 tsp
  • basil - 1/2 tsp
  • small zucchini, sliced - 2 item
  • shell macaroni - 1/2 c
  • Parmesan cheese - 1 item

How to make minestrone soup:

In covered skillet, cook sausage links in 1/2 cup water for 5 minutes. Drain off water. Remove cover and brown sausage, turning frequently until cooked through. Add oil, if necessary. Remove sausages from pan and slice.

In pan drippings, saute onion and garlic until transparent. Transfer to Dutch oven and add tomatoes with juice, beef broth, beans, carrots and seasonings. Cook, uncovered, about 20 minutes. Add zucchini and macaroni; cook about 30 minutes. Sprinkle with cheese to serve. Makes about 6 servings.
