Minestrone soup
Ingredients/Components
- salt - 2 tsp
- water - 9 c
- pepper - 1/4 tsp
- clove garlic, minced - 1 item
- chopped onion - 2 c
- chopped celery - 1 c
- sage - 1/4 tsp
- can tomato paste - 1 oz
- olive oil - 1/2 c
- chopped parsley - 4 Tbsp
- macaroni - 1 c
- can beef broth - 1 1/2
- carrots, sliced thin - 2 item
- chopped cabbage or more - 1 c
- can kidney beans red light skin - 1 lb
- canned or frozen beans or peas - 1 c
How to make minestrone soup:
Heat oil in a large pot. Add garlic, onion, celery and parsley. Cook until soft. Stir in tomato paste and next 7 ingredients. Mix well. Bring to a boil. Lower heat, cover and simmer slowly 1 hour.
