Ingredients/Components

  • salt - 2 tsp
  • water - 9 c
  • pepper - 1/4 tsp
  • clove garlic, minced - 1 item
  • chopped onion - 2 c
  • chopped celery - 1 c
  • sage - 1/4 tsp
  • can tomato paste - 1 oz
  • olive oil - 1/2 c
  • chopped parsley - 4 Tbsp
  • macaroni - 1 c
  • can beef broth - 1 1/2
  • carrots, sliced thin - 2 item
  • chopped cabbage or more - 1 c
  • can kidney beans red light skin - 1 lb
  • canned or frozen beans or peas - 1 c

How to make minestrone soup:

Heat oil in a large pot. Add garlic, onion, celery and parsley. Cook until soft. Stir in tomato paste and next 7 ingredients. Mix well. Bring to a boil. Lower heat, cover and simmer slowly 1 hour. Add remaining ingredients and cook 10 to 15 minutes.
