  • water - 2 3
  • salt and pepper to taste - 1 item
  • olive oil - 3 Tbsp
  • garlic clove, minced - 1 item
  • medium onion, chopped - 1 item
  • oregano to taste - 1 item
  • beef stock - 1 c
  • cooked lentils - 1/2 c
  • cooked macaroni - 1 c
  • large can tomatoes - 1 item
  • basil to taste - 1 item
  • chickpeas - 1/2 c
  • or 4 potatoes - 3 item
  • chopped chuck - 1 lb
  • or 4 stalks celery with leaves, diced - 3 item
  • or 4 large carrots, diced - 3 item
  • each: cannellini, kidney and lima beans - 1 c

How to make minestrone soup:

In large Dutch oven, saute in olive oil the onion, garlic, celery and celery tops. Then add chopped chuck and cook until meat is browned. Add water, salt, pepper, potatoes and carrots. Cover and simmer for 1 hour. Finally add remaining vegetables and seasonings. Mix together and simmer for 20 to 30 minutes.
