Minestrone
Ingredients/Components
- water - 1 qt
- long grain rice - 1/3 c
- clove garlic - 1 item
- salt and pepper to taste - 1 item
- carrots - 2 item
- potatoes - 2 item
- olive oil - 2 Tbsp
- onion - 1 item
- tomato puree - 2 Tbsp
- can whole tomatoes - 1 item
- bouillon cubes - 2 item
- leek - 1 item
- frozen peas, thawed - 1 pkg
- smoked ham - 4 oz
- celery stalk - 1 item
- small pasta - 1 c
How to make minestrone:
Dice ham in small pieces. Rinse vegetables. Peel carrots, onion and potatoes. Slice all vegetables or cut into julienne sticks. Saute ham and vegetables in oil for a few minutes. Transfer to a large pot. Add water, bouillon cubes, tomato puree, garlic, pasta and rice. Cook covered on medium-low heat for 20 minutes. Add chopped tomatoes and thawed peas to soup. Heat.
