Microwave peanut brittle
Ingredients/Components
- sugar - 1 c
- vanilla - 1 tsp
- butter or margarine - 1 tsp
- baking soda - 3/4 tsp
- light corn syrup - 1/2 c
- roasted, salted peanuts - 1 c
How to make microwave peanut brittle:
Lightly butter a 15 1/2 x 10 1/2-inch baking sheet with raised sides; set aside. In a 2-quart bowl, combine sugar and syrup. Cook on High for 6 to 8 minutes or until syrup turns a light brown color. Stir in peanuts, butter or margarine and vanilla until blended. Cook on High for 1 minute. Place bowl on hot pad. Syrup will be very hot. Gently stir in baking soda until mixture is light and foamy. Pour evenly onto prepared baking sheet; let cool 30 to 60 minutes. When cool, break into small pieces. Store in airtight container. Makes about 1 poundNote: If raw peanuts are used, add peanuts and 1/8 teaspoon salt to sugar-syrup mixture before cooking. Peanuts will brown in syrup.
