Ingredients/Components

  • sugar - 1/2 c
  • cornstarch - 1 item
  • water - 1 c
  • mochi-ko - 1 c
  • prepared "An" 8 to 10 balls

How to make microwave mochi:

In a microwavable bowl, mix sugar and mochi-ko first, then add water and stir until smooth. Cover with Saran Wrap, cook on High for 3 minutes and stir smooth. Cover again and cook additional 2 minutes, or until done, and stir until smooth. (It's easier using a wooden mallet type stick if one is available, if not, a wooden spoon will do.)

Have a tray ready, generously coated with cornstarch to keep mochi from sticking, and empty the mochi onto it. Use cornstarch to form balls (about the size of walnut). Flatten mochi; place a ball of prepared "An" in center, bringing the edges together on the bottom. This recipe makes about 8 to 10. (Double ingredients and time to make more at once.)
