  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • brown sugar - 1 c
  • baking soda - 3/4 tsp
  • popped corn - 4 qt
  • light Karo syrup - 1/4 c
  • butter 1 stick - 1/2 c

How to make microwave caramel corn:

Place popped corn in large grocery sack (regular weight paper, not too thin). In a microwave bowl, mix together butter, sugar, syrup and salt. Cook in microwave on High for 4 minutes, stirring twice. Next add vanilla and baking soda. Stir until foamy. Pour mixture over the popped corn in the sack. Shake to mix. Cook in microwave 1 1/2 minutes and shake; cook in microwave 1 minute and shake; cook in microwave 1/2 minute and shake. Spread on wax paper lined cookie sheet. Spread evenly with a wooden spoon. Let cool and store in an airtight container. (Tin cans work well.)
