Ingredients/Components

  • chopped green onions - 1 c
  • chopped bell pepper - 1/2 c
  • stick margarine - 1/2 item
  • cooked white rice - 3 c
  • sour cream - 1 c
  • small curd cottage cheese - 1/2 c
  • salt - 1/2 tsp
  • seasoned salt - 1/2 tsp
  • seasoned pepper - 3/4 tsp
  • can chopped green chilies - 1 oz
  • grated sharp cheese - 1 c
  • paprika - 1 item

How to make mexicana rice:

Saute onions and bell pepper in margarine. Remove from heat; combine with remaining ingredients, except paprika. Toss lightly to mix and pour into a greased casserole dish. Bake at 350° for 30 to 35 minutes. Garnish with paprika. One cup chopped ham can be added to make a main dish.
