  • chicken stock - 3 c
  • mild salsa - 1/2 c
  • minced fresh parsley or cilantro - 1 item
  • frozen crinkle cut carrots - 1 c

How to make mexican vegetable soup:

In saucepan, combine the beans, broth or stock, carrots and lime juice. Cover and bring to a boil. Serve garnished with salsa and parsley or cilantro.
