Ingredients/Components

  • salt - 1/2 tsp
  • butter, melted - 1 item
  • sliced green onion - 1/3 c
  • grated Parmesan cheese - 1/4 c
  • chili powder - 1 tsp
  • fine dry bread crumbs - 1/2 c
  • salt and pepper to taste - 1 item
  • can tomato soup
  • black pepper - 1/4 tsp
  • cumin - 1/2 tsp
  • can diced green chiles - 1 oz
  • hot sauce to taste - 1 item
  • chicken breast halves, skinned and boned - 8 item
  • Monterey Jack cheese, cut in 8 strips - 4 oz

How to make mexican-style chicken kiev:

Tomato Sauce:1 (1 lb.) can tomato soup1/2 tsp. cumin1/3 c. sliced green onion salt and pepper to taste hot sauce to taste Pound chicken pieces to about 1/4-inch thickness. Put about 2 tablespoons chiles and 1 Jack cheese strip in center of each chicken piece. Roll up and tuck ends under. Combine bread crumbs, Parmesan cheese, chili powder, salt, cumin and pepper. Dip each stuffed chicken in shallow bowl containing 6 tablespoons melted butter and roll in crumbs mixture. Place chicken rolls, seam-side down, in oblong baking dish and drizzle with a little melted butter. Cover and chill 4 hours or overnight. Bake, uncovered, at 400° for 20 minutes or until done. Serve with tomato sauce.
