Ingredients/Components

  • sugar - 1 tsp
  • pkg - 1 oz
  • salt - 2 tsp
  • cider vinegar - 1/4 c
  • curry powder - 1 tsp
  • olive oil - 3/4 c
  • garlic clove, crushed - 1 item
  • garbanzo beans optional - 2 c
  • slivered almonds, toasted optional - 1/2 c
  • black olives, sliced optional - 1 c
  • avocado, diced optional - 1 c
  • raw zucchini slices - 2 c
  • roasted sweet red pepper slices 7 oz - 1 c
  • lettuce "cups" - 1 item

How to make mexican salad:

Combine zucchini, corn and peppers, then combine the oil, vinegar and spices. Pour over vegetables. Let stand at room temperature for 1 hour. Cover and chill. Serve in lettuce cups.
