Ingredients/Components
- sugar - 1 tsp
- pkg - 1 oz
- salt - 2 tsp
- cider vinegar - 1/4 c
- curry powder - 1 tsp
- olive oil - 3/4 c
- garlic clove, crushed - 1 item
- garbanzo beans optional - 2 c
- slivered almonds, toasted optional - 1/2 c
- black olives, sliced optional - 1 c
- avocado, diced optional - 1 c
- raw zucchini slices - 2 c
- roasted sweet red pepper slices 7 oz - 1 c
- lettuce "cups" - 1 item
How to make mexican salad:
Combine zucchini, corn and peppers, then combine the oil, vinegar and spices. Pour over vegetables. Let stand at room temperature for 1 hour. Cover and chill. Serve in lettuce cups.Recipe categories: Salads, Main dish, One Dish meal.
