Mexican rice salad
Ingredients/Components
- sour cream - 1 c
- salt - 2 tsp
- lemon juice - 1 Tbsp
- grated Cheddar cheese - 1 c
- salad greens - 1 item
- sliced celery - 1 c
- cooked rice - 3 c
- hard-boiled eggs - 9 item
- seasoned pepper - 1 tsp
- picante sauce - 1/4 c
- large fresh tomato, chopped - 1 item
- sliced onion and tops - 1/2 c
- chopped can green chiles - 1/4 c
How to make mexican rice salad:
Combine eggs, rice, green onions, celery, cheese and chiles in large mixing bowl. Blend sour cream, lemon juice, picante sauce and seasonings. Pour over the egg mixture; mix well. Chill. Serve on salad greens and top with tomato. Makes about 6 seRecipe categories: Salads, Main dish, One Dish meal.
