Mexican rice

Mexican rice



  • water - 2 c
  • oil - 2 tsp
  • chopped onion - 1/4 c
  • chopped celery - 1/2 c
  • tomato sauce - 1/2 c
  • chicken bouillon cubes - 3 item
  • chopped green onion - 1/4 item
  • rice - 1 c
  • cumin - 2 tsp
  • large garlic clove, minced - 1 item

How to make mexican rice:

Add oil, celery, onion, green pepper, garlic and cumin to 12-inch skillet. Saute over medium-high heat, stirring constantly, until rice is browned. Remove from heat. Combine water and bouillon in medium saucepan. Bring to a boil. Add to rice mixture; stir in tomato sauce. Heat just until mixture simmers. Cover and continue to simmer 20 minutes. Remove from heat. Let stand, covered, 10 minutes before serving.
