Ingredients/Components
- salt - 2 tsp
- chopped onion - 2/3 c
- chili powder - 1 tsp
- chopped green pepper - 1 c
- bacon fat - 3 Tbsp
- whole tomatoes - 1 can
- raw converted white rice - 1 c
- chopped fresh tomato and green pepper optional - 1 item
How to make mexican rice:
In medium-sized heavy skillet with tight fitting cover, saute onion in hot bacon fat. Stir in rice, green pepper, chili powder, tomatoes and salt. Add 2 cups water. Bring to boil, then reduce heat and simmer, covered, 20 minutes or until liquid is absorbed and rice is cooked.
