Ingredients/Components

  • salt - 2 tsp
  • chopped onion - 2/3 c
  • chili powder - 1 tsp
  • chopped green pepper - 1 c
  • bacon fat - 3 Tbsp
  • whole tomatoes - 1 can
  • raw converted white rice - 1 c
  • chopped fresh tomato and green pepper optional - 1 item

How to make mexican rice:

In medium-sized heavy skillet with tight fitting cover, saute onion in hot bacon fat. Stir in rice, green pepper, chili powder, tomatoes and salt. Add 2 cups water. Bring to boil, then reduce heat and simmer, covered, 20 minutes or until liquid is absorbed and rice is cooked. Garnish with chopped tomato and green pepper.
