Mexican quiche
Ingredients/Components
- half and half - 1 c
- salt - 1/4 tsp
- shredded Cheddar cheese - 1 c
- 9-inch baked pie shell - 1 item
- ground cumin - 1/8 tsp
- shredded Jack cheese
- eggs, beaten slightly - 3 item
- can green chilies, chopped - 1 oz
How to make mexican quiche:
Mix 1/2 cup Cheddar and all the Jack cheese with the chilies and put in the bottom of baked pie shell. Microwave the half and half, salt and cumin 2 minutes to heat. Do not let boil. Slightly beat the eggs and slowly add the hot milk mixture to the eggs. Pour over the cheese in the pie shell. Sprinkle with the remaining cheese. Microwave 8 to 9 minutes or until almost completely set. Let stand 8 to 10 minutes. Serve.To reheat, microwave 30 seconds per slice.
